All our vines are harvested manually and only when the fruit attains optimal maturity.

A few weeks before the estimated harvest date we scrupulously monitor the ripening of the bunches, by tasting the berries every day, to determine the order in which the parcels will be harvested.

The tasting of berries consists of tasting the skin, pulp and seeds of a grape separately to judge ripeness.
