Viticulture
Les Quarterons Blanc has been certified organic by Ecocert since 2012 and biodynamic by Demeter since 2013.
Rigorous pruning and regular work throughout the year help to maintain a low yield.
Vinification and Ageing
We Hand harvest at optimal ripeness. The grapes are sorted in the vineyard and again in the winery.
The vinification is “natural”, (only with wild yeast ) in stainless steel tank, at low temperature, between 15˚c and 17˚c to conserve all of the aromatic finesse.
At the end of the fermentation process, it is aged on the lees for 9 to 12 months : 50% in 500L oak barrels (Atelier Centre France and Stockinger), 50% in amphoras with periodic batonnages (lees stirring).
This is our estate’s most personal wine !
Best with a slightly spicy dish or white meat in sauce, such as chicken curry, or even with scallops in saffron sauce.
