Viticulture
We constantly strive to achieve a natural balance across the vineyard. This led us to the decision to run our vineyard based upon the precepts of biodynamic agriculture, Demeter certified.
We Hand harvested at optimal ripeness. The grapes are sorted in the vineyard and again in the winery.
Vinification and Ageing
Fermentation is done with indigenous yeasts only, followed by maceration in stainless steel tanks for 2 weeks.
There is no filtration, and no sulphites are added. This wine is certified “Vin Méthode Nature”, which allows the cabernet franc to express itself in its purest and profound form, without any “make-up”.
Serving suggestions: This wine will accompany with panache your friendly moments, around aperitif boards, a confit of pork shank or a Sainte Maure de Touraine.
